Cheese Biscuits

One of my fondest memories is of my grandmother and her making biscuits. She also made sweet potato biscuits and my favorite cheese biscuits. When my granddad would bring home some sharp cheddar cheese that he bought at the corner store, my grandma would make us cheese biscuits. This cheese is unlike the cheese that we buy today, it would come in a large wheel. One time I went with my granddad to buy this cheese, the store was one of those old mom and pop types. The store owner would cut off a wedge of the cheese from this big wheel and weigh it on the scale and we would take it home to grandma and she would work her magic. We would take the biscuits still hot from the oven and break them open and pour King’s syrup over the tops; gobbling up every bite. I still make cheese biscuits for my family today, but I use a baking mix, I never learned how to make biscuits like my grandma.


Cheese Biscuits

2 ¼ cups Bisquick baking mix
2/3 cup milk
4 oz sharp cheddar cheese; cut into cubes


Preheat oven to 425⁰F.

In a small bowl stir together baking mix and milk until soft dough forms. Break off about a ¼ cup of dough in your hands; rolling it into a ball; flatten the ball slightly than add a few cheese cubes in the middle;

 folding dough around the cheese.

 Make sure all the cheese is covered.

 Place on ungreased cookie sheet.

Bake 10 to 12 minutes or until a golden brown.

I'm commenting on the pineapple cake. Delicious and so easy to make. I couldn't find a place to rate it where the recipe was posted. That was the prettiest and best cake recipe I have done in a while. Thank you for sharing!
