Scandinavian Almond Bars

When I first saw this cookie I thought of Christmas, Mary Herbert a friend from church brought them to our church pot luck and I just had to have the recipe. I made them for Christmas this year and they turned out great. Such a good cookie, the recipe is going into my family cookbook. That way I can make them for years to come. Thank you Mary



Scandinavian Almond Bars

1 3/4 cups flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup butter
1 cup sugar
1 egg
½ teaspoon almond extract


Mix together dry ingredients in a small bowl; set aside. In a large mixing bowl, beat ½ cup butter until softened. Add sugar and beat until fluffy. Add egg and almond extract. Add dry ingredients and beat all together.

Divide dough into four equal parts

 and form each one into a 12-inch roll.

Place two of the rolls 4 to 5 inches apart on un-greased cookie sheet and flatten dough so it is 3 inches wide. Repeat with last 2 rolls.


Brush with milk. Sprinkle with sliced almonds.



Bake at 325⁰F for 12 to 14 minutes. Edges should be slightly browned. Cut into 1-inch diagonal strips while bars are still warm. Cool and then drizzle with almond icing.



Almond Icing

2 cups powder sugar
½ teaspoon almond extract
4-6 teaspoons milk


In a small bowl stir together powder sugar and almond extract. Add milk to make a thin consistency and drizzle over bars.
