Peanut Butter Cup Cookies

I first made this recipe for my Christmas ornament exchange party a few years ago. There are a few web sites with different version of the recipe. I found this one on allrecipes. I changed it just a little. The dough was too soft to handle so I add more flour and reduced the amount of milk. You can use your favorite peanut butter cookie recipe if you like. I love a recipe that is so simple and taste great to.


Peanut Butter Cup Cookies

2 cups all purpose flour
½ teaspoon salt
1 teaspoon baking soda
½ cup butter, softened
½ sugar
½ cup peanut butter
½cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla
1 tablespoons milk


48 miniatures chocolate covered peanut butter cups, unwrapped.

 Preheat oven to 375⁰. Sift together the flour, salt and baking soda; set aside. Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 48 balls and place each into ungreased mini muffin pan. Bake at 375⁰ for about 10 minutes.
Remove from oven and immediately press a mini peanut butter cup into each ball.

 Cool and carefully remove from pan.
