Italian Sausage Soup




This soup is easy to make, and you can customize it any way you like. Add tortellini or your favorite pasta. The sausage gives this soup it's great flavor. Try it with a nice crusty bread on a cold winter night.


Italian Sausage Soup

1 pound Italian sausage
1 clove garlic, minced
2 (14 ounce) cans beef broth
1 (14.5 ounce) can Italian-style diced tomatoes
1 cup sliced carrots
1 (14.5 ounce) can great Northern beans
2 small zucchini, cubed
1 box frozen chopped spinach
salt and pepper to taste

In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots and salt and pepper. Reduce heat and cover, and simmer 15 minutes.

Stir in beans with liquid and zucchini. Cover and simmer another 15 minutes, or until zucchini is tender.
Add spinach and return to a simmer for another 5 minutes.
