Fresh Apple Cake with Caramel Sauce


I have been making this cake for the past 25 years. Richard cousin Carol Fisher gave me this recipe when we first got married. Then I got to thinking 25 years later that caramel sauce would send this recipe over the top! WOW! Now my family can't get enough of this cake!



Fresh Apple Cake
2 cups apple, diced
2 eggs
2 cups sugar
2 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon salt
2 teaspoons baking soda
1 cup oil
1/2 cup chopped nuts (optional)
In a large bowl mix together by hand, diced apples, eggs and sugar. Add flour, cinnamon, nutmeg, salt, baking soda, oil and nuts. Mixing well by hand. Batter will be thick. Spoon into an 9x13 inch baking pan or Bundt pan. Bake in an 350F. oven for 45 to 50 minutes or until toothpick inserted in center comes out clean. Serve with or without caramel sauce.
Caramel Sauce
1/2 cup butter
1/2 cup milk or cream
1 cup brown sugar
Combine the ingredients in a small sauce pan. Bring to a boil over medium heat, boil for 3 minutes.
