Pumpkin Bread


As the weather turns colder and we head into the fall months, my mind turns to baking. I love the way the house smells when breads are baking in the oven, banana, apple, ginger and my favorite pumpkin bread.





Pumpkin Bread

1 (15oz.) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups sugar
3 1/2 cups all-purpose flour
2 teaspoon baking soda
1 1/2 teaspoons salt
2 1/2 teaspoons pumpkin pie spice

Optional: Add 2 cups chocolate chips, dried cranberries, raisins or nuts

Preheat oven to 350F. Grease and flour 3 loaf pans. In large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt and pumpkin pie spice. Stir the dry ingredients into the pumpkin mixture until well blended. Pour into prepared pans.

Bake for about 50 minutes or until toothpick into center comes out clean.
