Pineapple Cake
I was at work the other day and I started thinking about cake recipes it’s not surprising I’m always thinking of either baking or cooking something. Will any ways the reason I was thinking about a pineapple cake recipes is because my co-worker were talking about pineapples that they bought at the flea market and I started thinking about my grandma’s pineapple cake with seven minute frosting, it was one of my favorites next to her chocolate marble cake. Oh wait a minute there is few more favorites her coconut cake and her red velvet cake. Now you know why I love to bake I love cake. And I think my grandma Annie Mae Whitley made the best cakes. This is not her pineapple cake recipe that recipe left this world when she passed away; she never wrote any of her recipes down she kept them all in her head. I wonder if my grandma was alive in this computer world of ours would she also have a cooking blog.
Pineapple Cake
1 yellow cake mix
1 small box vanilla pudding mix
4 eggs
1/3 cup oil
20 oz. can crush pineapple, divided
Glaze
¼ cup butter
¾ cup crushed pineapple
2 cups powder sugar
Preheat oven to 350⁰F. Grease and flour Bundt pan or angel food cake pan. Set aside ¾ cup of crushed pineapple for glaze.
In a large mix bowl combine cake mix, pudding mix, eggs, oil and remaining pineapple. Mix on medium speed for 3 minutes. Pour into prepared pan. Bake for 45 to 55 minutes or until a toothpick inserted in center comes out clean.
For glaze; in small sauce pan melt butter add the ¾ cup crushed pineapple and powder sugar, stir until sugar is dissolved. Spoon glaze over cooled cake.

Thanks for bringing it to my attention that I left out the oil in the directions. I glad you like the cake!
ReplyDeleteYou didn't leave it out. I just put mine in the oven. Can't wait. I'm going to use 2 cups brown sugar for the butter glaze. Will also put a few maraschino cherries on top. Easy pineapple upside-down cake.

DeleteDo you drain the crushed pineapple or do you include the juice with the cake mix, glaze, or both?

ReplyDeleteNo I did not drain the pineapple I just scooped it out of the can. You can rain the pineapple if you like! Stefanie

ReplyDeleteYou must be American, please do not forget to specify in your recipe if the pineapple is drained and if the pudding is instant.Very important info. Sounds good, think I will try it. Thanks, always happy to try new recipes.
ReplyDeleteI just noticed that this recipe does not call for any water. Is that right? Another thing, I bought Betty Crocker yellow cake mix and noticed it has pudding already in the mix. Do I add extra pudding or not?
ReplyDeleteI used instant pudding in this cake recipe and be cause I did not drain the crushed pineapple I did not add any water. Like most of my recipes I make them up as I go.
ReplyDeleteThis answered all of my questions which were about draining the pineapple and also about using instant vanilla pudding. The grocery aisle was out of reg. pudding so I bought instant. I am planning on serving this at our Bible study group tomorrow night. I think it's going to be a big hit !!

ReplyDeleteI made this cake last night and the only thing I think I did wrong was when I flipped it out of the pan, I left it over and it "flattened" down about half its'size. I noticed in your picture that the cake stays upright so I am making another tonight to get it right. The taste is out of this world!!!!

ReplyDeleteI just made this cake but since the glaze was so runny I poked holes in the cakes a poured the glaze over it. My husband and his friends enjoyed so much that I have been requested to make another one for tomorrow. This time I'll make the glaze thicker. Thanks for such an easy and delicious recipe.

ReplyDeleteI've made this 3x. I'm addicted. I prefer using the store brand crushed pineapples compared to Dole for the glaze to look like this. The Dole crushed is more like finely chopped so it doesn't have that mushed look. Also I bake a lil less time cuz my oven will have the cake burnt on the edges.
