Sunshine Muffins


These happened to be Ariel’s favorite muffins. I found this recipe in a Taste of Home magazine years ago. It’s such as easy recipe to throw together, and I always seem to have the ingredients on hand. The recipe says it make 14 muffins; but I have never heard of a 14 cup muffin pan and it doesn’t make sense to dirty up 2 muffin pans so I even out the batter between a 12 cup muffin pan, makes nice big muffin crowns. I would like to fold in some blueberries into the batter, but then Ariel would not eat them because she doesn’t like blueberries.


Sunshine Muffins

2 eggs
½ cup water
1/3 cup milk
2 tablespoons vegetable oil
1 package (9 oz.) yellow cake mix
1 package (8 ½ oz.) corn bread/muffin mix

In a bowl combine the eggs, water, milk and oil. Stir in mixes and mix well.

Fill greased and floured muffin cups half full.

Bake at 350⁰F for 18-20 minutes or until a toothpick comes out clean.

 Cool for 5 minutes; remove from pans to wire racks. Yield: 14 muffins.
