Coconut Macaroons




I love a good simple recipe. These coconut macaroons are so much simpler to make then the old fashion way by beating egg whites, I love a good simple recipe that looks like you spent the time and effort. They are sweet enough on their own or if your really up for a treat, dip them in chocolate!



Coconut Macaroons
2/3 cup flour
5 1/2 cups flaked coconut
1/4 teaspoon salt
1 can sweetened condensed milk
2 teaspoons vanilla


Preheat oven to 350F. Line cookie sheets with parchment paper. Set aside.

In a large bowl combine all the ingredients, mixing well with a wooden spoon or if needed mix with your hands. Scoop out on to parchment paper tablespoonful mounds.


Bake for 10 to 12 minutes or until cookies are a golden brown. Cool on parchment paper on racks.
